Another Kid-Approved Lunch: Greek(esk) Pita Pockets

Lunchtime. I don't know about you, but I dread it. The food never is very good, everything is boring and "been done." If I have to eat another turkey sandwich or grilled cheese, I might scream. We're getting into spring/summer and we will soon be presented with loads of fresh fruits and veggies to make delicious meals. One of my favorite things is Greek salad. However, hummus isn't too far behind that in the line up. Isaac looooves anything that has to do with pizza so I figured, let's put it all together!

I knew this meal had a good chance of working out because Isaac loves hummus and cucumbers, but tomatoes are sometimes a toss up. So, I went with it. I bought some pitas (I accidentally got the pocket kind so my Greek pizza idea soon turned into a pita pocket sandwich, but it works either way).

I made a quick marinaded cucumber and tomato salad:

1/2 cup diced cucumber
1/2 cup diced tomato
Basil, salt and pepper to taste
Drizzle of olive oil
Drizzle of Balsamic vinegar

Stir, refrigerate until serving.

I also did a quick Tzatziki sauce, but I don't know exact measurements. I roughly followed this recipe, but I cut it down BIG time since I'm not making enough for a small army... just me and Isaac. 

Store bought hummus was the splurge of the day. Sometimes I make my own but I wasn't in the mood to grind up chickpeas all day, so I took the lazy way out. Assemble as follows...

  1. Warm your pita - I just wrap them in foil and put them in the oven at 350 for a few minutes. Microwaving them makes them really chewy, so I don't do that.
  2. Open the pocket and spread around a healthy dollop of hummus.
  3. Put in a couple scoops of the cucumber and tomato salad.
  4. If you have feta, feel free to toss some of that on. I forgot to grab some, so I didn't have any... sad.
  5. Drizzle a bit of your Tzatziki sauce over the stuffing.
  6. NOM NOM NOM.

After Isaac's first bite, he says, "I like this a lot! It has good flavor on the inside." He describes things in such a hilarious way. I love that kid.

I know that Isaac is a bit of an anomaly when it comes to his lack of picky-ness at meal time, but I also have never coddled him or tiptoed around his dislikes. Dinner was dinner and he could eat it or not. Trust me, he never starves. If he doesn't like something, he eats some of it anyway. Remember, it takes kids SEVERAL times of trying something before their palette becomes accustomed to it. If they don't like it now, keep trying... their tastes might change. They'll never change if they don't try new things.
